The annual Ulaanbataar Cycling Classic in Ulaanbataar gives you exactly that.
The start and finish of the race is the Genghis Square, also known as Suhkbataar Square, in the center of Ulaanbataar. On the way the riders will venture out onto the steppe. Like a horde of barbarians on their way to invade China, they will ride across non-existing roads. Goat paths will lead them across the foot-hills of the Bogd Khan Uul, the mighty mountain south of Ulaanbataar. After that they just have to follow the Tuul river back to Ulaanbataar but they have to be careful not to be swept along with the current when crossing the ford.
The route is tough, very tough. Only the strongest can survive to claim the spoils of their plunderous raid across the steppe.
